RIVERTON — The Portland ice cream chain Salt & Straw opened at Mountain View Village on Friday, Oct. 16, at 4489 W. Partridge Hill Lane, Suite S-120, after a soft opening two days earlier, Salt Lake City Weekly reported 1.

The shopping center's page for the shop gives its hours as 11 a.m. to 11 p.m. daily, lists the phone line (385) 247-1290, and advertises a "Salt & Straw Grand Opening weekend" on Oct. 16 and 17 2.

Co-founder Kim Malek, who started the company with her cousin Tyler Malek about 15 years ago, said the opening menu adds a flavor made for Utah: Frosted Pink Sugar Cookie, built on a sweet ice cream base with vanilla sugar cookie crumbles, sugar cookie dough and ribbons of pink frosting swirled through 1. Malek tied it to the state's soda shops. "Given the culture of dirty sodas in Utah, we thought it would be fun to speak to the novel treats and culinary experiences here," she said 1.

Five flavors rotate each month beside a core menu of 13, and October's five are Halloween-themed 1. They include The Great Candycopia — four hand-made candy bars poured into a salted butterscotch ice cream — and Creepy Crawly Critters, a sweet matcha ice cream with candy-coated chocolate crickets and toffee-brittle mealworms, made with the Bay Area edible insect company Don Bugito 1. The Halloween menu runs through Nov. 1 and gives way to a Thanksgiving menu Malek described as "the five courses of a Thanksgiving menu" in ice cream form, from stuffing and Parker House rolls to pumpkin pie and a candied turkey flavor 1.

A second Salt & Straw is to open at Trolley Square in early December. Malek said the company had wanted to open the two Utah shops at the same time, "but sometimes older buildings are full of surprises" 1.
